- medium eggplant1 unit(s)
- Honey1 dessert spoon
- Balsamic Vinegar1 teaspoon
- Salt to taste
- Chopped Basil Leaves5 unit(s)
- Oil of your choice2 tablespoon
- Cut the eggplant into 1/2 cm slices
- In a hot skillet over medium heat, add a tablespoon of the oil, the eggplant and brown one side.
- Turn the slices, add another tablespoon of oil and let the other side brown.
- Add the honey spreading over the eggplant slices and at the bottom of the skillet, turn off the heat immediately and sauté to impregnate the honey.
- Add the balsamic vinegar, sauté a little more to stir. Season with salt and sprinkle the basil on top.
- Serve warm or at room temperature.
