- Butter3 tablespoon
- Salt1 teaspoon
- Homemade vegetable broth or hot filtered water1 cup
- Cumin seeds1 teaspoon
- Olive oil2 tablespoon
- Freshly ground black pepper to taste
- Steam 4 large carrots, peeled and cut into 4. After about 20 minutes they are well cooked, but prick with a fork to check if they are very soft.
- Pass the carrots to the processor with a nice piece of butter (about 3 tablespoons) and a teaspoon of salt. Drizzle the carrots with half a cup of the broth or hot water. Process well until smooth and silky. Taste the salt and grind the black pepper over the puree. If you think it needs more tenderness, add more butter and hot broth/water.
- In a frying pan, lightly toast a teaspoon of cumin seeds, add olive oil and wait for a minute to perfume. Drizzle the puree with this cumin oil. Goes great with carrots! Delicious!
