- Cooked brown rice1 cup
- Ricotta Cream1/2 cup
- Chopped red onion1/4 cup
- Minced garlic1 teaspoon
- Chopped Parsley1 teaspoon
- Carrots, chopped into small cubes, cooked al dente1/2 cup
- Zucchini, cut into small cubes1/2 cup
- Cooked corn1/3 cup
- Chopped Broccoli1/2 cup
- Ground black pepper to taste
- Sea salt to taste
- Ghee Butter1 dessert spoon
- In a pan, heat the butter and brown the onion and garlic.
- Add all the vegetables and season with salt and pepper.
- Add a little water and the ricotta cream.
- Cook for 2 minutes and add the rice. Mix well, adjust the salt and finish with the parsley.
