- Olive Oil, Salt and Pepper to taste
- First you have to remove all the skin from the eggplant, then apply Olive Oil, salt and Black Pepper all over it and wrap it in aluminum foil and bake for 50 minutes.
- Cut the bacon into cubes and the garlic into slices and brown in a non-stick frying pan with a drizzle of olive oil. After roasting, carefully remove the foil and place on a plate.
- With the help of a spoon, knead the eggplant to open it all, then add the juice of half a lemon, olive oil, plus a little salt and pepper.
- Cut the polenguinho into cubes and put it in the eggplant, also put the bacon and garlic. Lastly, mint. Serve on time.
