- Water100 ml
- Demerara sugar6 tablespoon
- Instant dry yeast10 g
- Brown rice flour (one and a half cup)180 g
- Himalayan Salt1 coffee spoon
- Potato Starch3 tablespoon
- Sweet sprinkles (1/4 cup)4 tablespoon
- Xanthan Gum1 tablespoon
- Baking Powder1 tablespoon
- Green banana biomass5 tablespoon
- Egg1 unit(s)
- Coconut oil3 tablespoon
- Orange1 unit(s)
- Walnuts (1/2 cup)8 tablespoon
- 70% gluten-free and dairy-free cocoa1 cup
- Dried Fruits1 cup
- Make a fermentation sponge with 100ml of warm filtered water, 1 tablespoon of sugar, dry yeast and 3 tablespoons of rice flour. Stir well and let it ferment until it turns into a sponge.
- Meanwhile, mix the rest of the rice flour, potato starch, sweet tapioca, salt, xanthan gum, baking powder and sugar. Beat with a mixer on low speed and gradually add the yeast.
- Add the other ingredients one by one, minus the nuts and dried fruits. And keep hitting.
- Add 100ml of water at room temperature and finally, the nuts, fruits and orange zest.
- Let the dough rise, in the form of a panettone, for approximately 45 minutes or until it doubles in volume. Bake in a preheated oven at 180 degrees for 35 minutes.
