- Cherry tomato300 g
- Diced Onion1 unit(s)
- Olive oil100 ml
- Garlic4 unit(s)
- Salt to taste
- Cut the eggplant into cubes
- Cut the peppers into cubes
- In a pan, sauté the garlic with the onion in olive oil. Add the eggplant and peppers, sauté for 5 minutes, add the spices and stir gently
- Then pour all the eggplant on a platter and bake for another 25 minutes.
- The eggplant will be dry but juicy, a delicacy that accompanies any meal.
- Japanese eggplant has no seeds, is less acidic than other eggplants, has a sweet taste and soft texture. Extremely tasty!
