  • Purple red and yellow bell pepper (one of each)1 unit(s)
  • Onion1 unit(s)
  • Garlic4 unit(s)
  • Olive oil100 ml
  • Salt and pepper to taste
  • Paprika1 dessert spoon
  • Season1 unit(s)
  • Cherry tomato300 ml
  1. Cut the eggplant into cubes
  2. Cut the peppers into cubes
  3. In a pan sauté garlic with onion in olive oil
  4. Add the peppers and eggplant with cherry tomatoes, sauté for 5 minutes, add the spices, stir gently
  5. Distribute the braised eggplant on a platter, take it to the oven for 25 minutes
  6. Serve with fresh rice
  7. Japanese eggplant is less acidic than the others, sweet and creamy. Delicious!
