  • Diced Italian Zucchini1 unit(s)
  • Grated large carrot1 unit(s)
  • Onion1/2 unit(s)
  • Garlic2 unit(s)
  • Bay leaf1 unit(s)
  • Sweet paprika to taste
  • Ginger to taste
  • Cinnamon powder to taste
  • Cashew Nuts15 g
  • Olive oil1 tablespoon
  • Salt to taste
  • Pepper to taste
  1. In a large pan, heat the oil and sauté the onion and garlic until golden.
  2. Add the carrots, season with salt, pepper and sweet paprika. Add the bay leaf and a pinch of cinnamon powder. Saute for about 5 minutes.
  3. Add the zucchini, mix well and let it cook for about 2 minutes. They should be cooked but still retain some crunch.
  4. When serving, add chopped cashews.
