- Diced Italian Zucchini1 unit(s)
- Grated large carrot1 unit(s)
- Onion1/2 unit(s)
- Garlic2 unit(s)
- Bay leaf1 unit(s)
- Sweet paprika to taste
- Ginger to taste
- Cinnamon powder to taste
- Cashew Nuts15 g
- Olive oil1 tablespoon
- Salt to taste
- Pepper to taste
- In a large pan, heat the oil and sauté the onion and garlic until golden.
- Add the carrots, season with salt, pepper and sweet paprika. Add the bay leaf and a pinch of cinnamon powder. Saute for about 5 minutes.
- Add the zucchini, mix well and let it cook for about 2 minutes. They should be cooked but still retain some crunch.
- When serving, add chopped cashews.
