- Start by peeling the potato and cutting it into slices of about half a centimeter (it cannot be too thick, otherwise it will be raw, not too thin, otherwise it will break). Put it to cook in boiling salted water for exactly 3 minutes.
- In a frying pan, put enough oil to cover the bottom, place the potatoes (without overlapping) and season with salt and pepper. Fry for 4 minutes, turn with the help of two forks and fry for another 4 minutes. Then throw the beaten eggs and seasoned with salt and pepper over the potatoes, cover and let it firm (use low heat to avoid burning). This omelet is more difficult to turn, so move away the edges that have already been cooked and tilt the pan so that the uncooked egg falls from the top to make it easier. Cover again, as it also cooks with the help of steam. When you set it on top (mine took 5 minutes) it's done!
