- Rice for risotto2 cup
- Dry white wine1/2 cup
- Vegetable broth4 cup
- Salt and pepper to taste
- Butter1 tablespoon
- grated cheese50 g
- Make the vegetable broth with the vegetables of your choice (or use ready-made) and set aside.
- With the pressure cooker off, add the rice, broth, salt and pepper. Shake well.
- Cover the pan, put it on medium fire and as soon as you get pressure count 3 minutes and turn off.
- Release the pressure, add the butter and cheese and stir vigorously until creamy. If you want, at this point you can flavor your risotto with meat, vegetables, mushrooms or other cheeses. In the case of mushrooms, meats or vegetables, they must already be sautéed and seasoned. Serve immediately.
