- Grated Parmesan1 tablespoon
- Sea Salt to taste
- Ground black pepper to taste
- Olive oil1 dessert spoon
- Heat the oil in a non-stick frying pan and sauté the shitake.
- Season with salt and pepper.
- Add the eggs and stir little by little until they are cooked.
- Adjust the salt and finish with the parmesan.
