- Arborio rice1 cup
- Homemade vegetable broth1 l
- Chopped Onion1/3 cup
- Minced garlic1 teaspoon
- Sicilian Lemon Zest1 dessert spoon
- Squeezed Sicilian Lemon1/3 cup
- Grated Parmesan1/2 cup
- Ghee Butter2 tablespoon
- Sea salt to taste
- Ground black pepper to taste
- Dry white wine1/2 cup
- In a pan, heat 1 tablespoon of the butter and brown the onion and garlic.
- Add the arborio rice and stir well to seal the grains.
- Add the wine and continue stirring until it evaporates completely.
- Add a ladle of the hot vegetable stock, salt, pepper and stir.
- Continue the process of adding a ladle of broth and stirring constantly until the rice is almost cooked.
- At this point add the lemon and zest, mix well and adjust the salt.
- Turn off the heat and finish with the Parmesan and a spoon of butter. Serve immediately.
