- Water1 tablespoon
- Butter1 teaspoon
- Salt to taste
- Pepper to taste
- Heat a nonstick skillet over medium high heat;
- Beat the eggs in a small bowl, add the water and beat again;
- Place the oil and butter in the skillet at the same time and when the butter stops foaming, beat the eggs a few times and pour into the skillet;
- When the omelet starts to harden, lift the edge with a spatula and let the wet portion of the mixture drain under the omelet;
- Season with salt and pepper. Add the filling of your choice;
- Slide the omelet onto a plate and, holding the hand strap, fold the omelet in half using the pan;
- Garnish with parsley, if desired.
