- Olive oil1/2 cup
- Cashew Nuts1/2 cup
- Grated Parmesan1 cup
- Basil leaves (optional)1/2 cup
- Lemon juice1 teaspoon
- Salt to taste
- Freshly ground black pepper to taste
- Ice cube1 unit(s)
- Put only the leaves of the bunch of spinach in the blender jar. Save the butchers to sauté in another preparation.
- Add the other ingredients and beat until creamy. Reserve some of the chestnut and basil leaves to finish.
- Ready! Just mix the sauce into the cooked pasta of your choice. It's also great with mashed potatoes, polenta or, if you're not a vegetarian, fish or grilled chicken.
