- Ricotta (or soft tofu)250 g
- Drizzle the potatoes with olive oil and bake for 1h10, turning halfway through (230°).
- Arrange the tomatoes on a baking sheet, drizzle with olive oil and season with salt and pepper and bake for 40 minutes (230° - bake at the same time as the potato to enjoy the oven).
- Beat the roasted tomatoes with the ricotta. Taste and adjust seasoning if necessary.
- Remove the potatoes from the oven, cut them lengthwise (don't cut all the way through, so the halves don't separate completely). Season the inside with salt and pepper.
- Fill with the ricotta cream and tomatoes and bake again for 10 minutes (200°). Put the leftover stuffing on the table when serving, this way you can complement it on the plate in case any piece runs out!
