- Sweet Potato500 g
- Gem1 unit(s)
- Almond flour5 tablespoon
- Butter2 tablespoon
- Basil to taste
- Tomato sauce to taste
- Wrap the whole sweet potatoes in aluminum foil one by one. Place in the oven and bake for approximately 30 minutes or until tender. Remove from the oven, peel the potato skin and place in a bowl. Add the yolk, salt and knead. Add the almond flour little by little, just enough to get the point. Knead and mix until you get a homogeneous mixture. Take the dough to a floured countertop (with wheat or almond flour). Make rolls with the dough in cut the gnocchi in the width you prefer. Place the butter in a skillet and sear the gnocchi for a crispier, golden texture on the outside. Serve with tomato sauce and fresh basil.
