- Olive oil to taste
- Salt to taste
- Peel the potato and cut into small pieces. Cook in salted water until soft. Remove from heat and drain the water. (Reserve half a glass of this water)
- Mash the potatoes with a fork until you get a soft dough.
- In a pan over medium heat, add a drizzle of oil. Add the salt to the onion head (already minced), let it sauté until golden. Add the potato mass, mix well. Add the cream and keep stirring. If you need to put the water you reserved. Adjust the salt. Your puree is ready. You can make it with regular potato using this same recipe. You can replace the cream with butter.
