- Small potato2 cup
- Cottage cheese2 tablespoon
- Italian mayonnaise2 tablespoon
- Olive oil2 tablespoon
- Grated Mozzarella1 to taste
- Salt1 to taste
- Remove the tomato cap and with the help of a knife and a spoon remove all the pulp and seeds. Boil the tomato for just 3 minutes, remove from the pan and set aside. Stuffing: Cook the potatoes until softened. The amount will depend on how many tomatoes you want to fill (in my case it was two). Once that's done, mash the potato with a fork and mix the mayonnaise (2 cs), the curd (2 cs) and the seasonings. Heat this mixture for a few moments so that the cheese melts and becomes homogeneous. Then stuff the tomatoes and to finish put mozzarella on top and a little oregano. If you prefer, you can put it in the oven.
