- Start by chopping the onion and garlic into cubes. Also chop the leek into thin slices. Separate the broccoli florets from the stems. The zucchini and tomatoes also cut into cubes.
- Start by sautéing the onion until golden. Also add the garlic, leek and a pinch of salt and sauté until wilted. Then add the broccoli, a pinch of salt and sauté for 2 minutes. Finally add the zucchini and tomatoes, a pinch of salt and seasonings (I used 2 teaspoons of turmeric and 1 teaspoon of coriander powder, plus a pinch of pepperoni). Stir well and sauté for another 2 minutes.
- Add the rice, stir well, add the water and let it cook until the water dries up. When the water dries off, turn off the heat, cover the pan and let it rest for 5 minutes before serving. Serve with a drizzle of olive oil!
